When you navigate to the Messages screen you are presented with the list of teams with messaging enabled.
The following screen will display all of the available communication channels that you are a part of. To create a chat group the user must be either and Administrator or Owner of the team. Creating a chat group is explained here.
By selecting the settings icon in the top left of the screen above, the team Admin or owner can adjust which communication channels are available.
Each chat group allows for a range of interactions from simple text to GIFs and reactions.
